Mexican Fruit Salad

1 can of Media Crema
1/2 cup chopped pecans
Mix, chill and serve!

Summer Salads

We had FUN at Evelyn's home tasting lots of yummy salads. Those there were Nancy, Evy, Evelyn, Ingrid and Yessika.

Breakfast Salad

This is one of Kara Bagley's recipes, but I substituted blueberries and raspberries for the strawberries and bananas.

1 cup barley, cooked
1 cup oat groats, cooked and rinsed
1 cup strawberries, sliced
2 bananas, sliced
1 cup pecans, chopped

Dressing:
½ cup apple cider vinegar
1/3 cup raw honey
1/2 teaspoon nutmeg
1 teaspoon fresh ginger, grated
½ teaspoon salt
1/3 cup flax oil
1/3 cup extra virgin olive oil
Blend dressing thoroughly. Pour over salad, toss to coat.

Supreme Pasta Salad

1 lb. cooked pasta
8 oz. Italian dressing
4 tbs. Salad Supreme seasoning
Combine and toss with any assortment of chopped fresh vegetables.
I added:
broccoli
cucumbers
tomatoes
1 green onion
red, yellow & green peppers
carrots
celery

Marshmallows & Peaches Salad

Mix together marshmallows, cool whip, canned peaches (drained), and cinnamon.

Poppy Seed Pasta Salad

Salad:
4-5 grilled chicken breasts cooked and cubed
16 oz. bow tie pasta—cooked and cooled
1 red bell pepper
¼ cup red onion, chopped
1 can black olives
½ cup Craisins
1-2 cans mandarin oranges, drained
1 pkg. baby spinach
Toss together in large bowl and add dressing.

Dressing:
1 cup olive oil
½ cup sugar
½ cup red wine vinegar
1 tsp. salt
1 ½ tbsp. red onion, chopped
½ tsp. tarragon
1 tsp. dry mustard
1 tbsp. poppy seeds
Mix in a blender and pour over salad.

Broccoli Salad

1 bunch broccoli chopped
6 strips bacon fried crisp & crumbled OR 1/4 cup of "Oscar Mayer Real Bacon Bits"
1/4 cup of Craisins
1/4 cup roasted sunflower kernels
1 small red onion finely chopped (optional)
Mix together in a medium bowl.
In a small bowl mix:
1/2 cup mayo
2 T. vinegar
2 T. sugar
Pour over broccoli mixture and stir to coat. Refrigerate at least 30 min. before serving.

Pistachio Pudding

Large container of cool whip
Pistachio pudding
2 cans crushed pineapple (don't drain)
3/4 package of marshmallows
chopped nuts (optional)
Mix it all together.
